Cranberry Orange Tangy Salad

 

 

Mandarin oranges and cranberry cause make this salad colorful and very refreshing, giving the beans a special tang.

Ingredients:
1 cup cooked cranberry beans,
Degassed, drained and chilled
½ cup chopped walnuts
1 medium red onion, chopped
7 tablespoons oil
3 tablespoons balsamic or malt vinegar
6 tablespoons canned-
Whole-berry cranberry sauce
1 small can mandarin oranges
½ teaspoon A&D Seasoning

Directions:
In a medium bowl, mix drained beans with walnuts and onion. In a smaller bowl, blend the oil, vinegar and cranberry sauce. Toss with the bean mixture. Serve chilled on a bed of salad greens, topped with the mandarin oranges.

Makes 4 to 6 servings.
