Lotsa Lentils Salad

The two colors of lentils make this salad really attractive, and since lentils cook about 10 to 15 minutes you can quickly put this one together.
Lotsa Lentils salad
Ingredients:
½ cup mild onion, finely chopped
½ cup commercial mild salsa
½ teaspoon dried oregano
2 tablespoons lemon juice
1 cup fresh spinach, chopped
1 teaspoon A&D seasoning
½ cup goat cheese or feta cheese (optional)
½ cup cooked Turkish red lentils, drained and chilled
½ cup cooked yellow lentils, drained and chilled (degassed beans)
Whole spinach leaves for arrangement

Directions:

  • In a small bowl, blend onion salsa oregano and lemon juice and set aside.
  • Put chopped spinach in a medium bowl and toss in the salsa mixture, then add lentils.
  • Line salad bowls with the whole spinach leaves and mound salad on top
