Pink Beans
This pale red bean will turn reddish brown when cooked. This bean is cultivated in Africa as well as North and South America. Excellent as a chili bean. This bean became famous as the main ingredient in Dennison’s Chili Con Carne and the staple bean ingredient at the Tracy Bean Festival chili cook-off.
Ingredients:
1 lb. dried pink beans
2 green peppers, coarsely chopped
1 onion chopped
4 stalks celery, coarsely chopped
3 tablespoons peanut oil
½ teaspoon dried oregano
1 28-ounce can plum tomatoes, chopped
1 teaspoon granulated sugar
add 1 teaspoon A+D Seasoning
salt to taste
Directions:
Cook beans until tender. Remove beans, but keep water. Lightly brown onions, peppers, and celery in the oil. Add oregano, cumin, and chili powder. Cook the spices, while stirring, about 3 minutes. Add tomatoes and cook until sauce is thick and vegetables are thoroughly cooked. Add beans and bean broth, sugar and salt. Bring to a boil, and when chili is piping hot serve. Makes 6 servings.
