Good ol’ American potato salad with the addition of beans for taste and color. A great combination of two nutritious foods that is family favorite.
Ingredients:
4 cups cooked potatoes, chilled and cubed
1 cup cooked peanut beans, drained and chilled
2 hard-cooked eggs, chilled and chopped
½ cup celery, chopped
1 medium red onion, thinly sliced
¼ cup sweet pickle relish or chopped pickle
1 to 1 ½ cups mayonnaise
2 teaspoons Worcestershire sauce
1 teaspoons Dijon mustard
½ teaspoon garlic powder
Salt and freshly ground black pepper to taste
Paprika and parsley garnish
Directions:
In a large bowl, mix together potatoes, beans, eggs, celery, onion and relish or sweet pickle. In a smaller bowl, blend mayonnaise, Worcestershire sauce, mustard, garlic powder, salt and pepper. Add dressing to the potato-bean mixture. Sprinkle top with paprika and garnish with parsley sprigs.
Makes 6 to 8 servings. |
