Santa Maria B-B-Q

 

 

 

 

 

Ingredients:

1 lb.Santa Maria/pinquito beans
1 env. Chili mix/OR 1 teaspoon A+D seasoning/rub
1 clove garlic minced
½ lb. bacon diced
½ lb. ground beef
½ teaspoon oregano
1 cup tomato juice
Salt to taste, up to 2 teaspoons

Directions:

Sort beans for pebbles and rinse
Use USDA degas formula or Pacific Grain and Foods degas recipe. Recover beans generously with water. Heat to boil, add spices/chili mix. Turn heat to simmer and cook 1-2 hours, OR until beans are fork tender.
Saute bacon, onion, garlic, tomato juice and ground beef. Add mixture to beans and simmer ½ hour and serve. Makes 8-10 servings of classic ranch style beans for tri-tip.
